Papa Solis’ ”Do the Dance”
“Mock-a-mole” Bean Dip
- 1 15.5 oz. can Cannellini or Garbanzo beans
- 3 tablespoons Olive Oil
- 2 tablespoons Sour Cream
- 1 tablespoon Lemon juice
- 1/4 -1/2 cup Papa Solis’ “Do the Dance” Salsa (according to your heat preference)
- 1-2 cloves of minced garlic
- 3 tablespoons minced fresh cilantro
- ¼ teaspoon Salt
- ¼ teaspoon Pepper
Combine all ingredients in a food processor or blender until smooth.
Transfer to serving bowl, cover and let stand at room temperature for about 30 minutes or refrigerate overnight.
Serve with pita chips, tortilla chips or your favorite veggies. Try it on sandwiches too.
